Give Thanks!

The holidays are rapidly approaching! Most holidays are overloaded with higher fat foods in large quantities. Thanksgiving is no exception. But it doesn’t have to mean a month away from your healthy lifestyle. With a little effort, the holidays can be enjoyable, delicious and low fat.

  • Try your favorite pumpkin pie recipe using skimmed evaporated milk
  • Make the crust with margarine or vegetable oil and reduce the amount by 25%
  • Reduce the amount of margarine or butter in your dressing by one half -- use a little fat-free chicken broth in its place
  • Don't stuff the bird--try the crock pot method below.
  • If sausage stuffing is a must, use a low fat version (at least 90% lean), and reduce the amount by 25%. Cook the sausage and drain it before adding to the stuffing mixture. Discard all fat drippings.
  • Remove the skin from your serving of cooked turkey.
  • Add an extra 10 to 15 minutes of exercise to your holiday routine.

Remember, it’s only one day - the diet isn’t doomed if you resume your healthy habits the next day!

Crock Pot Dressing

Use your favorite stuffing recipe but follow this cooking technique instead of stuffing the bird. Three or four hours before serving, place your prepared stuffing recipe in a crock pot set on Low. Baste about every 30 minutes with fat-free chicken broth. If the dressing begins to get "toasted" around the edges, stir it to the center.

 

 
Garlic Mashed Potatoes
Yield: 10 servings (from Recipe Rehab Cookbook)
   

3 pounds (12 medium) all-purpose white potatoes
1/2 cup skim milk
1/4 cup margarine
8 ounces fat-free cream cheese
1/2 cup fat-free sour cream
1 egg, beaten
1/4 cup fat-free egg substitute
1/2 teaspoon salt
dash black pepper

Spray 2-1/2 quart casserole with vegetable oil spray. Peel and quarter potatoes. Put potatoes into boiling water; cover and boil for 10 to 15 minutes or until done. Drain. Mash potatoes with masher or electric mixer until smooth, gradually adding milk and margarine. Add cream cheese, sour cream, egg, egg substitute, salt, and pepper. Blend until smooth. Spread potato mixture into prepared casserole. If you are preparing this ahead of time, cover and refrigerate until ready to bake. Bake, uncovered, at 325 degrees for 45 minutes.
