Good Cheer

It just wouldn’t be the Holidays without some 'nog. This recipe is from the Recipe Rehab Cookbook and, in addition to being low fat, it’s safer to drink than the real thing. As you probably already know, eating raw eggs puts you at risk for salmonella poisoning -- definitely not something to cheer about (see this month’s FYI)!

Don’t risk running out of this delicious concoction. Buy enough of the ingredients to make 3 or 4 batches. It’s that good! And with only 82 calories and less than one gram of fat per serving, this eggnog is a winner all around.

Healthy Recipes

 
Eggnog
Yield: 5 cups/10 servings (from Recipe Rehab Cookbook)
   

1-1/2 cups fat-free egg substitute
2 cups skim milk
1/3 cup sugar
1 teaspoon vanilla extract
1 cup nonfat vanilla frozen yogurt
1/2 teaspoon nutmeg
1/4 cup light rum (optional)
1/4 cup bourbon (optional)

Combine all ingredients in blender. Blend well. Chill at least 4 hours before serving. Sprinkle with additional nutmeg, if desired.
