It turns out that breakfast really is the most important meal of the day. It makes sense. Most people go at least eight hours between dinner and breakfast. Your body uses fuel to keep functioning even while you sleep. If you don't eat again until noon or 1:00 pm , your body is in major energy deficit .   Breakfast-skippers tend to experience lack of energy later in the day. Even with a good lunch, the body is not able to make up for the difference. They often complain of feeling sleepy and lethargic after lunch.   Most people argue that they aren't hungry in the morning. Eat a good breakfast anyway and within 2 to 3 weeks you're body will adjust to your new regimen.   Here are some excellent reasons to start the day off right.

  • breakfast is shown to reduce a person's risk of obesity and insulin resistance
  • breakfast is one of the few proven strategies to maintain long-term weight loss
  • breakfast is shown to improve grades and behavior in school children

If traditional breakfast foods turn you off, try some non-traditional foods like leftover pizza, a microwaved potato with broccoli and low fat cheese, or a broiled English muffin topped with a slice of low fat cheese and a tomato slice.

  • cereal with 1% milk and chopped nuts
  • 2 slices toast with 1 tablespoon peanut butter
  • grilled cheese sandwich made with 2% cheese

  • 1% yogurt
  • 1% cottage cheese and fruit


   
 

To shorten the prep time in the morning, cook the sausage and potatoes
the night before. This is a nutritious dish to start the day off right!

Breakfast Burrito : 4 servings

fat-free flour tortillas

ounces 97% fat-free breakfast sausage, such as Jimmy Dean's 97% Fat Free

1

large potato, peeled, grated

3

whole eggs

2 egg whites
1

large tomato, diced

3/4

cup shredded low fat (4-5 grams per ounce) cheddar cheese

1/2

cup salsa

  Warm tortillas according to package directions. Cook sausage in skillet; drain well. Add potatoes and cook until golden brown. Add eggs and egg whites to mixture in skillet; stir until eggs are done. Stir in tomatoes. Divide all ingredients evenly among four tortillas: put cheese down center of tortilla; cover with egg mixture; top with salsa. Roll tortillas and serve immediately.

As you can see, using 97% fat-free sausage makes a huge difference in fat
and calories (but not nearly as big a difference in taste).
