Biscuits

It's really not that difficult, at least most of the time. We tried making low fat biscuits several years ago. Our husbands decided they were hockey pucks and we gave up! The success of the recipe below is due to self-rising flour and 2 teaspoons of baking powder. Wish we had thought of that.

2 cups self rising flour
2 teaspoons baking powder
3/4 cup skim milk
1 tablespoon canola oil

Biscuits and Gravy

Preheat oven to 450 degrees. In medium bowl, combine flour, baking powder, milk, and oil; mix with fork just until dry ingredients are mixed in. Dust hands with flour and shape dough into 8 balls. Place on ungreased cookie sheet; flatten slightly. Let rise 10 minutes. Bake at 450 degrees for 10 minutes.
