Gourmet Chicken Salad

If you pack sandwiches, there are many lower fat sandwich meats and cheeses available. The chicken salad recipe below is delicious served with cut up fresh fruit or in a pita pocket or on a roll as a sandwich.

Gourmet Chicken Salad 
 Yield: 6 servings

3 cups (1 pound) cooked chicken breast, skinless, shredded or chopped
1 stalk celery, chopped finely
1 can (8 ounces) sliced water chestnuts
1-1/2 cups fresh pea pods, chopped or whole
2 tablespoons regular mayonnaise
6 tablespoons low fat (1 gram per tablespoon) mayonnaise
1/2 cup light sour cream
2 teaspoons lemon juice
1/4 teaspoon white pepper
1 tablespoons curry powder

Chicken Salad

In large bowl, combine chicken, celery, water chestnuts, and pea pods; set aside. In small bowl, combine mayonnaises, sour cream, lemon juice, pepper, and curry powder. Add sauce to chicken mixture and mix well. Cover and chill for at least 30 minutes.
