Grilled Salmon

To grill fish, you will need a fish rack or smaller grate to keep the fish from falling through. Heavy duty foil with holes poked through will work too. For fish with skin, cook it skin side down the whole time. For fish steaks, cook them on both sides as you would beef steaks. Fish requires 10 minutes of cooking time per inch at medium heat.

Grilled Salmon

2 teaspoons olive oil
2 green onions, tops included, sliced thin
1 teaspoon dried tarragon or dill
1/4 teaspoon salt
1 pound salmon fillet, cut into 4 portions
2-1/2 tablespoons lemon juice
2 green onions, tops included, sliced thin
1 teaspoon Dijon mustard
1/8 teaspoon black pepper

In cup, combine oil, lemon juice, onions, tarragon, mustard, salt, and pepper. Put fish in single layer in glass dish; pour marinade over fish. Let stand 15 minutes. Grill fish over medium heat skin-side down, 10 minutes for each inch thickness or until fish flakes easily with fork.
