Mom's Meatloaf

Besides using very lean ground beef for your meatloaf, you can lighten the fat load even more by using a meatloaf pan. It looks like a loaf pan, but it's really a pan inside a pan. The inner one is ridged and has holes in the bottom to allow the fat to drip away from the meat.

Mom's Meatloaf 
 Yield: 8 servings 

 

 

The Jewish Hospital Weight Management Center

2 pounds 90% lean or better ground beef
1 cup chopped onions
1 tablespoon chopped parsley
2 cloves garlic, minced
1 egg, slightly beaten
1 cup seasoned bread crumbs
1/2 cup steak sauce
2 tablespoons ketchup
1 teaspoon black pepper
1 teaspoon salt 

 

In large mixing bowl combine all ingredients except ketchup; mix thoroughly. Pack into meatloaf pan or shape into loaf and place on broiler pan. Spread 2 tablespoons ketchup over top of loaf. Bake at 350 degrees for 1-1/4 hours. Let stand 10 minutes; slice.
