Oatmeal Raisin Cookies

Cookies are another good choice for packed lunches. If you don't have time for the homemade cookie recipes below, there are some healthy choices you can buy. Fig (or any fruit flavor) Newtons, ginger snaps, graham crackers, and low fat vanilla wafers are good lunch box desserts.

Oatmeal Raisin Cookies 
 Yield: 4 dozen

3/4 cup margarine
2 eggs
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 cup granulated sugar
1 3/4 cups flour
1 teaspoon baking powder
2 cups oats
1/4 teaspoon baking soda
1 cup raisins

Oatmeal Cookies

Preheat oven to 375 degrees. In a large bowl, beat margarine with electric mixer for 30 seconds. Add sugars, baking powder and baking soda; beat until well mixed. Beat in eggs and vanilla. Beat in as much of the flour as you can; stir in remaining flour. Stir in oats and raisins. Drop dough by rounded teaspoons 2 inches apart onto cookie sheet. Bake at 375 degrees for 10 to 12 minutes or until edges are golden.
