Glazed Sweet Potatoes

Glazed sweet potatoes is another “power vegetable” dish that tastes too good to be good for you. It’s sweet enough that even the finicky eaters will love it.

Glazed Sweet Potatoes
Yield:  4 servings

1 can (18 ounces) sweet potatoes, drained
3 tablespoons brown sugar
1 teaspoon margarine
2 tablespoons chopped nuts

Plate of Sweet Potatoes

Spray a one-quart casserole dish with vegetable oil spray. Preheat oven to 375º. Slice potatoes into 1/2-inch slices. Layer half of the potatoes in prepared dish. Sprinkle with half of brown sugar. Repeat layers; top with margarine. Bake, uncovered, at 375º for 30 minutes or until potatoes are glazed, spooning liquid over potatoes once or twice. Sprinkle nuts on top and bake 5 minutes more.
